Preparation

Advance Preparation
Cut out the core and blanch tomatoes in boiling water for 10 seconds, place tomatoes into cold water
and remove skins.

Method
1. Dice the tomatoes and the cheese into even slices.
2. Mix the herb paste into the mayonnaise, cover, label and refrigerate until required for use.
3. Lay the wraps out on to a clean surface, spread each one with some of the basil mayonnaise. Now
lay on the rocket, tomato and cheese, roll up tight. Wrap in cling film and refrigerate for 1 hour before
serving.
4. Unwrap the rolls and cut in half at the angle, serve either in a takeaway holder or on a plate with
salad garnish.

Nutrition
Added salt is not recommended but if used keep to a minimum. If using oil use unsaturated (olive or
sunflower) and reduce the quantity used where possible. This helps to provide a nutritional balanced
dish.
