Preparation


To prepare the sausage roll
Heat an oven to 180⁰C.

Mixthe egg with the salt and a little water to create an egg glaze.

Spread a large sheet of cling film or baking paper onto the work surface and dust with gluten free flour. Divide the pastry into 4 equal pieces.

Cover each piece with a second sheet of floured cling film or paper and then roll out each piece into 4 squares, about 30cm x 30cm and about 5mm thick.

Trim the edges and cut each square in half to make 8 strips approximately 15cm x 30 cm wide. Keep the pastry cool and avoid handling it too much: use the film to lift the pastry sheet over the sausage meat. If the pastry gets too soft and difficult to handle, chill it for a short while, but don’t leave it until hard or it may crack.

Take the sausages out of their casings, and place to one side of each pastry strip. Brush the edges with a little egg glaze and roll the pastry around the filling to enclose.

Cut sausage rolls to size and transfer to a lined baking tray, seam side down. Brush the tops the remaining egg glaze.

Bake for about 30-40 minutes until cooked through.
