Chill the serving dishes. Prepare the potatoes, salmon & vegetables, place in a large bowl, blend with the lemon juice and olive oil, cover, refrigerate and label until required for use.
1. Place the prepared potatoes, salmon and vegetables in a large bowl. Lightly season with ground black pepper.
2. Decant the prepared sauce and lightly mix into the potatoes, salmon & vegetables, including the rocket.
3. Spoon the prepared salad into chilled serving dishes. Garnish with chopped parsley.
4. Serve as required in a refrigerated display.
The salad flavour can be adjusted by using other varieties from the KNORR Range of Italian Prepared Sauces. To extend the salad you can reduce the potatoes and replace with cooked pasta from the KNORR Collezione Italian pasta Range. A sqeeze of fresh lemon can be used as an alternative to JIF
Keep added salt to a minimum. Use an unsaturated oil (olive or sunflower) and reduce the quantity used. This helps to provide a healthy balanced dish.
