Step 1

  • Red onion - thinly sliced 200.0 g
  • Vinegar, cider 100.0 g
  • Cloves 1.0 g
  • Caster sugar 50.0 g
  • Star anise 1.0 g

Step 2

  • Minced beef - 15%vl 2.0 kg
  • Sea Salt 1.0 g
  • Peppercorn, black ground 1.0 g

Taking an old classic to the next level. Seriously meaty, juicy, cheesy, crunchy and Smokey, this burger has got it all !



  1. Step 1

    For the pickled red onion:
    • Heat the Apple cider vinegar with the clove and star anise.
    • Dissolve the caster sugar and allow to cool.
    • Add the red onion and refrigerate for use. 

  2. Step 2

    For the Smash burger:

    • Preheat the griddle. 
    • Divide the minced beef into 20 x 100g meatballs.
    • Place the minced beef ball on to the griddle and press down to 'smash' it for the first 10 seconds of cooking.
    • Cook for 2 minutes, season with salt and pepper and turn over.Press burger down to smash it and leave cook for further 2 minutes or until correct core temperature is reached. 
  3. Step 3

    To Serve:

    • Toast the bun, melt the cheese on the patty's.
    • Spread the HELLMANN's Mayo sauce on the bottom bun.
    • Lay the lettuce on the base.
    • Build your burger on top, cheese topped burger followed by the onion rings, add the second patty.
    • Add the pickled onions and drizzle with the HELLMANN’S Sweet BBQ sauce.
    • Place the bun on top.
    • Serve with skin on fries.
