French Onion Soup
Ingredients (10 portions)

| French Stick , 20 Slices |
Preparation
Method 1
1. Sweat off the onions, cook without colour.
2. Pour in the beef bouillon and bring to the boil.
3. Simmer for 10 mins.
4. Pour into oven-to-table soup bowls.
5. Float 2 slices of French stick on top of the soup.
6. Sprinkle some grated cheese on top.
7. Place in a hot oven.
8. Bake in a hot oven until cheese is melted and golden brown.
Method 2
1. Spread the sliced French stick on to a baking sheet.
2. Sprinkle the grated cheese on top.
3. Place the baking sheet under a hot grill.
4. Grill until cheese has melted and is golden brown.
5. Prepare the soup as in method 1.
6. Pour into soup bowls.
7. Float bread and cheese on top and serve.
