Advance Preparation
Pre-heat oven to 190°C/400°F/Gas 5. Warm serving dishes. Prepare ingredients as directed then cover,
label and refrigerate until required. Prepare flan/quiche dishes by lightly greasing with a little FLORA.
Method
1. Roll out the pastry and line the prepared cases. line the cases with grease proof paper and then add
rice, beans or coins. Place into the ovena and bake for 15 minutes or until lightly golden.
2. Heat the vegetable oil in a suitable pan, add the smoky bacon and cook for 3-4 minutes until just
browning. Remove from the pan and drain any excess liquid off, then add in the leeks, cook for 3-4
minutes. Remove from the pan, add to the bacon, allow to cool.
3. Crack the eggs into a suitable bowl, add in the COLMAN’S English Mustard, MEADOWLAND Double,
milk and whisk until eggs are mixed in.
4. Add the soft cheese and grated cheese to the egg mix. Pour into a pastry case and place into the
preheated oven. Bake for 30-40 minutes until set.
5. Remove from the oven, allow to rest for 5 minutes then cut into portions and serve.

Serve with a crisp salad.
Handy Hint
The bacon can be substituted for dice potato for a vegetarian option
Healthy Nutritional Advice
Added salt is not recommended but if used keep to a minimum. If using oil use unsaturated (olive or
sunflower) and reduce the quantity used where possible. This helps to provide a nutritional balanced
