Advanced Preparation.
Poach chicken breast until thoroughly cooked.
Method.
1. Slice chicken into strips. chop apricots into quarters.
2. Make up the sauce as per manufactures instruction and then chill in line with current HCCP.
3. Decant the mayonnaise and chilled curry sauce in to a suitable bowl and mix in the chicken, apricots
and raisins.
4. Place the chicken mix in to a clean bowl, cover, label and refrigerate until required for use.
Service Hint.
Serve in a sandwich or as a jacket potato filling.
Handy Hint.
The chicken can be substituted for prawns, vegetables or pulses and beans.
Healthy Hint.
Added salt is not recommended but if used keep to a minimum. If using oil use unsaturated (olive or
sunflower) and reduce the quantity used where possible. This helps to provide a nutritional balanced
