Advanced Preparation.
Prepare ingredients as above. Pre heat oven at 200ºC (390ºF) Gas 8.
Method.
1. Place the pork into a suitable bowl and spoon the char siu paste over, cover, label and refrigerate
until required minimum of 2 hours.
2. Remove the pork from the marinade and place on to a rack in a deep roasting tray. Pour 1/2 litre of
water into the bottom.
3. Place the pork in the oven and roast at the high temperature for 20 minutes, reduce the temperature
to 150ºC (300ºF) Gas 3 and slow roast for 3 hours or until thoroughly cooked. Baste the pork half way
through with the remaining marinade. Top the water up twice with remaining water through cooking
time.
4. Remove the pork from the oven and allow to rest for 20 minutes. pour cooking juices into a suitable
pan and place over a medium heat, add the char siu paste and mix well. Keep warm. Remove the
crackling from the pork and place back into a hot oven until crispy.
5. Carve the pork and arrange centre of plate garnish with the crackiling, bean sprouts, spring onions
and coriander. Serve the sauce in a suitable dish on the side.
Service Hint
Serve with a Asian noodle salad or roasted potatoes.
Handy Hint
Pork loin or pork fillet can used instead of the belly.
Healthy Hint
Added salt is not recommended but if used keep to a minimum . If using oil use unsaturated (olive or
sunflower) and reduce the quantity used where possible. This helps to provide a nutritional balanced
dish.
