Preparation

Pre heat an oven to 180ºC (350ºF) Gas 4

1. Place cooked chicken and apricots in a bowl, blend in mayonnaise and curry sauce, cover, refrigerate
and use as required.

2. Place washed & prepared sweet potatoes on a baking tray, cover in foil and bake in the pre heated
oven until cooked (approximately 45 minutes).

3. Serve sweet potatoes topped with coronation chicken mix and accompanied by a mixed green salad.

A cheaper cut of chicken meat can be used in lieu of chicken supreme
