Creamy Rice Pudding

Preparation
Advanced Preparation.
Wash the rice under cold running water to remove excess starch. Pre heat Salamander/grill
Method.
1. Boil the milk, cream and split vanilla pod in a suitable heavy bottomed pan, add the rice, return to the boil, stirring occasionally.
2. Simmer gently, stirring frequently until the rice is cooked, mix in the sugar and dissolve.
3. Pour into serving dish, place under a salamander and brown slightly. Sprinkling with caster sugar will add an extra crispy top.
Service Hint
Serve with Flora short bread biscuits for a crispy texture.
Handy Hint
An egg yolk can be added at the end of method 2 to give a richer consistency. Cooking in a double boiler will prevent any burning on the
bottom of the saucepan.
Healthy Hint
Added salt is not recommended but if used keep to a minimum . If using oil use unsaturated (olive or sunflower) and reduce the quantity used where possible. This helps to provide a nutritional balanced dish.
