Pineapple Fritters with Chocolate Mint Ice Cream and Mango Coulis

625mlMilk, fresh
  Cooking Oil
  Sugar , Pinch of
  CARTE D'OR Mint Chocolate Ice Cream , 10 Scoops
250mlCarte D’Or Mango Coulis
  KNORR Meadowland (Whipping Cream) , for decoration

Preparation

1. Sift the flour and sugar into a mixing bowl and make a well.
2. Add the eggs and milk and mix to a smooth paste.
3. Mix in the oil and allow to rest before using.
4. Lightly dust the slices of pineapple with flour.
5. Coat with batter and place into a hot fat fryer.
6. Cook until golden brown on both sides.
7. Remove from fryer and place on kitchen paper to dry.
8. Serve on plate with a scoop of ice cream and drizzled with coulis.
9. Decorate with a whirl of whipped cream.
