Baked Seafood Chowder

| 250 | g | puff pastry , Frozen. |
| 100 | ml | Cream , Fresh. |
| 50 | ml | Brandy (Eau-de-vie de vin) , Cooking. |

Preparation
1. Make the Seafood Chowder as directed.
2. Add the mixed frozen seafood and simmer for 5 mins.
3. Add the brandy and cream and allow to cool.
4. Roll out the puff pastry and cut in circles to fit over the soup cups. 5. Pour the soup into the soup cups.
6. Eggwash the rim of the cups and cover with the puff pastry.
7. Eggwash the pastry and place into a medium heated oven.
8. Bake for 15 mins or until the pastry is golden brown.
